So I just got 3 jugs of nutrients (ch, ka, mg) and an auto doser. My LFS has a good deal going on for it. My question is do I need to turn off my skimmer while dosing? And can I keep my carbon in as well?

Absolutely not. I dose 24/7. My dosing pump adds a few drops every 30 seconds.

And can I keep my carbon in as well?
Absolutely, carbon doesn't take any of your dosed elements out of the water. If it did, you'd be screwing with the saltwater even before you started dosing! Ca, Mg and alk are already in your water, you're just adding more.

How old is your tank?
How many lps and sps corals do you have?
Do you do water changes?
Do you currently test for Ca, Mg and alk?

Provided your skimmer isn’t that close to were your dosing that it would suck up the elements being added straight away, just leave it running and you don’t need to remove the carbon.
