Over the last three months watching the dragon soul goniastrea it’s become fat and lost color...any help is appreciated

Plumping you’re is usually a sign of a healthy coral. The loss in coral can be due to your lighting spectrum and intensity as well as your nutrient and Alk level. Also the bottom picture is taken under blues which will always give better coloration over the more white spectrum of the top picture.
 
heres one with the blues...so it needs less light to get those brighter colors back?

IMO you should let it do it's thing as long as it's fat and fluffy; over time the colors could change back to what you want. I actually have one of these, 3 heads, and it started off very pink/red and as it healed up and grew it is now changing back to the yellow/gold on the edges.

Looks healthy to me! The other pic is just a very white spectrum it will wash out corals and make them look brown.
