"Chalice" is a common name given to many species, even different families of coral. "Echino" is short for Echinophyllia... Echinophyllia is a familiy of coral (with eight different species) that is many times labeled with the common name "chalice" especially Echinophyllia aspera.

Does it have anything to do with the way they eat. I have noticed some of my "chalices" have prominent mouths while some do not? Like I have a green chalice that has big eyes while my big pimpin and lime in the sky have very very small eyes.
