Can anyone explain why the M1 has to be calibrated? Video says to set the minimum and maximum. Do I set the minimum to where it's barely keeping up with the drain? I assume the maximum needs to be set to where it doesn't overflow the display?

Correct, you match it to your plumbing so that the pump cannot operate at to slow, or to fast of speeds that your plumbing can't handle it :) Otherwise if you didn't and say you put it in random mode, and it ramped up to 100% but your plumbing can only handle to 75% you'd overflow
 
In my system, it does absolutely nothing. It sets the slowest speed (for feed mode, which I don't use) and the highest possible speed (to prevent your tank from flooding due to an undersized overflow...mine can handle the pump at 100%). I calibrated it just so I don't see that blinking light on the driver lol.
 
Depends on what you are using the pump for. Minimum should be that point where the pump is running just enough to offset gravity and pipe friction; maximum the point at which the drain plumbing capacity gets exceeded. I'm using my M1 as a closed loop pump so the min/max setting isn't really necessary.
