My corals FS thread went further than I intended as I included much more than the title described, is there any way I can edit the title to reflect everything in the thread?

You should be able to click "Edit Post" on your first post - there you can change the title. If not PM me with what you want it to say and I can do it.

I have noticed that even when you change the title the update is not reflected on the main pages.

Yeah, I can never change my titles either 
you can change them but only a short time after making the thread. not sure how long it is but its not long.
i have changed them in the past but only very shortly after making the thread. after that it changed the title while viewing the thread but not on the main page
i assume thats to prevent probelms such as making a sale thread that says one thing and then changing later on. that would be fine most of the time but could be a problem as well and open the door for scammers
