Yes that would be a fine diet. Sardines would be a necessary addition in lieu of any other fatty fish. Bones and guts are also a added bonus and likely another necessary ingredient. Fang tooth eels would require a fish dominant diet and other eels would also need the addition of fatty fish, and bones or shells. Getting that food fresh and freezing in small batches that last about 6 months or so and you will have a very long lived eel. Maintain reef level mg for digestion, and don't feed too frequently, an adult eel once a week in a good rule of thumb.
