Got today my delivery, and wonder why there are two holes?
the big one is for the skim I guess so, but the little one doesn't realize why for

My guess is the skimate goes in through the side hole via attached barbed adapter.. The top hole is probably to facilitate easy opening of container and provide some ventilation.

The top hole serves as a place to put your finger in to easily grab the lid off to dispose the skimmate.

It also has a bonus feature of letting the stinky odor out so you can smell it.
