So I am doing Esv 2part and my alk is 8.3
And my calcium is 500
Do I still dose equal parts or do I shut down the cal until the number comes down ???

you should have calc around 420 to be balanced, the you can dose 1:1

Ok what if I get it there and the cal starts climbing again
Do I just lower the dose ?

IMO, you can dose 1:1 (based on alk need) now just fine and calcium will stay where it is, which is fine at 500 ppm, or you can dose just the alk part and let calcium decline for a while, then resume 1:1, or something close to it.

Yes, but I wouldn't presume that will happen.
