I want to put switches on my ESV Alk, Calcium and Magnesium reservoirs to give me a heads up when any of them are getting low. Would it be safe to use low-end float level switches? I'm concerned about the possibility of them, or their wiring, being compromised by strong chemicals. Alternatively I'd consider using optical level sensors plumbed through the container walls, or any other appropriate switch.

One could use float switches. I use GHL dosers and the calculate the level in the containers by the total amount one add's then subtracts the dose amount each day. An then has a lower limit you can enter and you can set an alarm or just a pulsing of LED light inside the top of the doser.

There are float switches that would likely be fine, but the ones I'm familiar with also are not inexpensive. I used and like the Omega Engineering LV-1201:

Any metal in it needs to be a high quality stainless steel or other resistant metal.
