Feeding a juvenile snowflake eel

I bought a juvenile snowflake eel (aprox. 6 inches) from the lfs about a week ago and was wondering what to feed it. I've kept larger morays before and fed them freeze dried krill, frozen squid, frozen clams and other similar foods. However, they were all a lot less skittish than this little guy. I've only seen him twice because of his size and the amount of LR in the tank and haven't attempted feeding via tongs either time because I don't want to spook him. Any recommendations on what to feed him? preferably something I could leave in the tank for a few hours after dark.
 
Get a piece of shrimp, thaw it out in tank water, rubber band it to a piece of LR, then lay it near where he's hiding out. He'll sniff it out.
