I want to get rid of filter socks in my WB 50.3 and use filter media cups with filter floss. Do you roll the floss or cut it up to layer it?

I use filter cups and roll my media. It's 1/2" think and I cut it into 3" wide strips. It works well. I know some rinse and reuse, but I toss the old and put in new every 3 days or when my water level rises above the cups and starts to flow into the overflow. Super easy and quick.

Meh, I just cut off a piece about as big as I think I need and stuff it in there. I cut a piece well larger than the filter basket circumference, lay it over the top and push it down in the middle. Protip, as long as you have the scissors out, cut a bunch of them. Then you're (well, I'm) a lot more likely to change it instead of putting it off another day or three.
IMO, that works best. Rolling it is uses more (I think) and layering it, well, that probably also uses more, but it's a lot more work too.
The only advantage I can see for making layers is that instead of changing it, you can just remove the top layer.

FWIW, at least in my system, the water flows over the edge of the basket (as opposed to flooding that section, so the only part that really gets all that dirty is the edge facing where the water comes in.

I buy 12" x 12" squares of white felt (no dye) from the local hobby shop. 12 to a pack and I pay $4.99 ( about .42 cents per sheet).

I lay them in a media tray and they work GREAT.

This is what I’m trying in my new tank, because I don’t want filter socks anymore and having no mechanical filtration backfired on me before.
Just started this tank, but so far, cutting and then plan to remove the top pad as it gets dirty.

That is what I do with the white felt sheets.

Thank you for the advice on cutting up a bunch of them. I did that last night upon reading this!
