So I know the average size micron is 100/200 micron. What would be a good size micron for polishing the water before it returns to the display tank? What's the smallest size not worried about the maintenance involved

I alternate between 100 and 300 (change socks 3 to 7 days). I guess you could go to a 1 micron but you would be changing it every few hours.

I also run a Diatom filter every few months to really polish the water.

100 micron is about the smallest pore size filter socks commercially available that most people would consider using, and they will polish your water free of particulate matter to crystal clarity, but they'll clog and require changing out every couple of days if you have any kind of bioload. I personally use 220 micron felt bags and still have to change them out every 3-4 days or so. Also of course the socks won't do anything about dissolved organics which can give water a yellowish tint.

What's a Diatom filter?

It is a Micron filter that is mega-boosted by using Diatomaceous earth to further lower the Micron level at which particles removed from the media it's filtrating. You can ultimately achieve a 2 micron filtering
