Is the hob filter doing anything for me?
Well, since you don't have RODI water, yes the carbon is helping. However, it's a big nutrient trap. The amount of poop and food that gets trapped can add a lot of unwanted nutrients that would spur algae growth.
I'm honestly looking into rodi systems currently. I'm liking to get one that I can also use for drinking water so I can justify it to my wife.
RO/DI water in of itself isn't good for drinking. It removes all of the minerals that our body needs. It wouldn't benefit you or your wife drinking it.
She said that she would help with the upkeep and convinced me that I should get it.
Remember, she convinced you to get it ;) Using RO/DI is one of the basic necessities to reef keeping.
I was also curious about getting more live rock since I have more water. Can I buy dry rock and add it to my current setup?
Yes, absolutely. However, you will go through the process of maturity much like a new tank. So the rock you add will contribute to another diatom bloom. Once that happens then you can start adding a clean up crew. Best to take things even slower going that route. It will benefit the tank in the long run.
Any suggested power heads? I picked up the one I have on a whim with no research.

With the RO/DI systems, I see setups that you can bypass the di part and have a pressurized tank for on demand ro water. This would help legitimize the expense.

Does anyone have any suggestions on a RO/DI system that I could have an on demand drinking water system? My mother it's asking about what she could get me for Christmas. :)
