Hi,
I currently have a 5-gallon saltwater tank it is a Fluval Evo 5. I have had it for about a year now and I have green star polyps and gorgonian in it. I really want to add more coral and/or fish now that I have it set up in my dorm room but I am not sure what to add because I see different minimum tank sizes for everything I research. If anyone has any suggestions that would be great!

What kind of light and flow do you have in the tank? If it is stock then you will likely want to avoid SPS as they need high light and high flow.
There are thousands of soft and LPS corals that would do fine in that tank though.
As far as fish, there is not much that will be able to live in that size tank. You could get a clown goby. They come in a variety of colors and stay small.
If it was me, I would probably get a pair of sexy shrimp. They are very small and get lost in bigger tanks. That tank you would be able to get an up close view of their behavior.

There's only two fish you can have in that size tank yellow clown goby or neon goby. for coral you could do pulsing xenia if you're prepared for it to grow a lot. you could also do some zoanthids

Fish that come to mind (obviously you can really only have 1, maybe a pair of the tiniest choices):
- any of the ORA cleaner gobies
- any Trimma sp.
- any Eviota sp.
- masked goby
- spikefin goby
- any Tryssogobius if you can find them
- smaller Priolepis like rusty or yellow
- Callogobius sp.

Pushing the envelope but probably fine:
- Pseudochromis elongatus stays pretty small
- Stonogobiops nematodes or Lotilla gracillosa with their respective shrimp, assuming you have a sand bed, rock, and a tight fitting lid

Unconventional choices:
- balssi squat lobster
- a couple Urocaridella shrimp
