Fish Habitat Requirements : Tank Dimensions VS Volume

In the middle of a moderately large build( 180 gallon) and have been curious about dimensions and how they relate to a proper environment for some of the larger fish in the hobby, specifically Tangs etc.
There's a lot of debate on gallonage, but even with the "recommended" volume, at what point is the tank too shallow, regardless if you're meeting the accepted guidelines for total volume. In other words, what would be a minimum acceptable vertical swimming space. Interested to hear some thoughts from some of the fish guys.
The tank is a rimless 72X36X16

It is my understanding that tangs like to swim in a straight line so length of the tank is the most important dimension. I am a scuba diver. You would be amazed by how large fish will go into even very shallow water. I think your tank would work well for all except the largest species of tangs.

Most fish don't swim top to bottom. So length + width is most important.
