So I'm getting ready to lead my tank to an sps dominant tank but was wondering what people thought to be an acceptable fish load and still have sps success. My total volume is about 115-120 gallons.

I would say its more on your nutrient export or how you go about doing that. I've seen SPS tanks that do great with tons of fish, but then again they do more waterchanges, chaeto, carbon dosing, etc.

IMO, the more food available to the corals, the better. You just need proper filtration to match the amount of fish waste.
Some setups I have seen to work out well:
Very large skimmer + GFO or Lanthanum Chloride
Very large skimmer + Algae Turf Scrubber
Large Algae Turf Scrubber
Very large skimmer + Carbon Dosing
