I just added my first fish and have my lights scheduled around my time at home. Currently I have the lights ramping up at 11:30 AM and completely off by 10:00 Pm. Will this mess up my fish’s sleep?

They will adjust to the lights and time. It may take a few days, but they will be okay.

My lights run for a total of 12 hours, not at full strength but including long ramp times. 10 hours is perfectly fine. Like mentioned above, your fish will adjust to the cycle you set. If your tank was in a completely dark room and your ran your light from 9pm to 9am your fish wouldn't know a difference. Just try to keep it consistent.
