I added a flame to my tank a week ago. It seems very happy, isn't aggressive towards its tankmates and isn't being bullied either.

I feed PE mysis and PE Calanus daily. I started putting in a bit of green sheets from Omega one (https://www.omegasea.net/products/nutrition/green-seaweed) but it hasn't seemed too interested in those yet, nibbling at algae on the rockwork instead.

Are those seaweed sheets a good choice for it, and/or what else can I feed it?

I feed my flame angels PE Mysis,LRS reef freenzy ,pellets..they will eat just about anything.. Nori (seaweed) sheets are good for them it just takes them awhile to figure it out sometimes..

example..I had a coral beauty in my frag tank for 7 months..I gave him nori every other day the whole time he never touched it..I just moved him to my new FOWLR tank .the Foxface in their ate the nori and the coral beauty does now too

Dwarf angels are grazers. Quite normal for one to initially just pick at the rock - in fact, productive live rock is critical to consistent success with these fishes. Give it time. None of mine really go for nori, but they all learned to eat from the water column.
