hi do you think I could keep a one spot fox face in a Red Sea reefer 300 G2 (250 litre display)

Sure but i would stick with that as my only large fish. But you could add another large fish like a britsletooth tang.

Thats a nice size tank. You can have a good amount of fish in it. Just the larger fish poop more so it adds more to your bioload.

The tank is to small for a foxface.
They grow very fast. I put a very small foxface in my 120. In 1 years time it was 6+". It also ate the tips of my green slimer but thats unusual. Rehomed to a 300g system.

Consider this a temporary home. While you can just assure you are providing good water quaity and diet

Yeah i heard they can eat certain corals. I believe mine is snacking on my new star polyps i just added but he leaves my gorgonian alone.
