I'm upgrading my Evo 13.5 to an Cube 20. My plan was to use new live sand as I've heard horror stories with switching sand over, use some existing rock and a few new pieces and then siphon all the existing water from the Evo over and then top off with fresh saltwater. I plan on letting it settle and then acclimating the fish to the new setup as there will be 1/3 of the tank of new water. My fear is that it will be a huge shock to fish and coral even though the majority is what they came out of.

I would just fill the new tank completely with new salt water. No need to put old water in. As long as you use the same salt your corals will be fine. If you keep your parameters different than what the salt mixes at, just drip acclimate them. If you are worried ammonia, take your ceramic rings from the evo and place them in the filter of the waterbox. A boost of bacteria wouldn't hurt. I wouldn't be too worried though since you are transferring all of your rock over and are using live sand.

How about fish? Same thing?

I think the fish will be fine as long as its the same temperature, salinity, and ph (which shouldn't be an issue as its the same water source as before). You can just swap them over.
