Are there any fish that shouldn’t/can’t be water dipped? I have the Midas Blenny in mind, but just curious.

Most can be although some cannot withstand the full 5 minutes for which you pull them out if quite distressed.
Assure water is same temperature as display tank and add a pinch of baking soda for ph
