Will one 21” ghost overflow work for a 6’ tank that will be pushing over 2000 gph? It says rated for 2000 on the website so will I use two? I haven’t seen many with two so I’m just checking.

No, you shouldn't use 2. Your best bet it's to diy an overflow with glass of you have that skill ;)
 
I would contact synergy or whoever's overflow you plan on using and ask them. Some guys here know the math on the drains and sizes, I don't off hand. A 1.5" siphon will handle a lot of water, probably 2k gph. The limiting factor may very well be the overflow weir. I've seen guys use 2 of them. Matter of fact, I think @revhtree used 2 on his tank.

Hopefully some others will chime in here!
 
A few of the ghost overflow manufacturers make larger stock models. I bought a 36" modular marine model for my new tank - it's rated at 3,000 gph.
