That sounds so *yum*...kind of late in the day (I eat dinner at ~5 PM) so tomorrow I'm gonna go pick out a nice roast, onions, potatoes, and fresh carrots to roast tomorrow...gah, talk about the power of suggestion.
Do Y'all do anything special for the gravy? I've not made roast beef in years because my wife's not big on it so it will be just for me.

1 Lipton onion soup mix (packet)
1 can cream of mushroom soup.
Sear roast in a pan or I do it on the grill.
Combine those 3 in a crockpot for xxxxx depending on the roast size.
With 1 - 1 1/2 hrs left add onion, mushrooms, potatoes, carrots.

I would have asked sooner but I passed out after I ate mine
