i am making strawberry tarts for a cookout. Yum!!

Strawberry cups


makes approx 30 cookie cups a


Ingredients


  • 4 oz cream cheese, room temp
  • 1 cup Cool Whip, thawed
  • 1 cup powdered sugar
  • 2/3 cup chopped strawberries, plus more for garnish *optional
  • 1/3 cup white chocolate chips
  • 1 (16.5 oz) tube sugar cookie dough

Instructions


  1. With your electric mixer beat the cream cheese and powdered sugar together until smooth, about 30 seconds. Carefully stir in your Cool Whip. When combined fold in your chopped strawberries.
  2. Place bowl in fridge to chill for 2 hours.
  3. Meanwhile, preheat oven to 350 ° and spray mini muffin pan with cooking spray. Place 1 1/2 teaspoons of cookie dough into each muffin tin.
  4. Bake for 8 minutes until they are just starting to golden.
  5. Remove from oven and immediately sprinkle 4-5 white chocolate chips in each cup. The heat from the cookies will melt them. As soon as the chips are soft spread carefully in the bottom of the cookie cup.
  6. Release the cookies from the muffin tin by loosening with a knife. Let cool on a wire rack until ready to fill.
  7. When ready to fill the cups, use either a spoon or a piping bag (or ziplock) and fill each with about one teaspoon of mousse.
  8. Garnish with a strawberry slice, if desired.

Store in refrigerator after assembled

Happy 4th. I'm really strugging today. Some of you know our sweet dog has been declining since January. We're getting very close now and it breaks my heart. I'm so glad our son and his family are here with us now. I need them, and our little grandson always makes me smile. Your posts/jokes/stories lift me up. Thank you. :)

yum... eber try it with milk chocolate? mmm.... now I'm thinking chocolate and raspberries ... all these recipes and nowhere to go.

i have a quart of yard grown raspberries. they go well in the recipe but the fam prefers strawberries so i defer.

speaking of tired...took friends and their family boating to see the fireworks last night. It was choppy 3-4’ waves when we entered the Gulf and I said to hubby that we should turn back for our guests’ comfort.

Nope.

I hope they did ok. My dad had the "friends get one try" rule. If I took a friend and they puked on the boat, they weren't invited back. Most of my friends got....one try.

And by the way, men don't listen. :rolleyes:
 
Good morning, and thank you for the hugs. Husband and I had our cry-fest yesterday. We know what has to be done. Everything is closed today, so we'll decide when tomorrow. Pup is mostly sleeping and seems comfortable. She won't eat much....except ribs. At this point, who cares? Terrible for the kidneys, but we gave her some ribs. She loved those.

I slept on the couch, just in case she freaked out over the fireworks, which were LOUD from 8:00 p.m. - 1:00 a.m. She slept right through them. The toddler, not so much. Poor baby was pretty upset, but finally settled down and is still sleeping.

The ribs were great! We also had grilled corn, potato salad, baked beans, and hush puppies. Oh, and I did manage to pick up a few pieces at the TSA sale....still shopping the aftersale, too. :D Liveaquaria also had a little sale going, so I ordered two fish for the BioCube. Little guy points to it and says "No bish." Well, he's going to have some bish this week! ;Joyful
