So my gbs doesn't seem to be doing very well, moving very slow, can't seem to get food from his hand ( lack of a better word) to his mouth, laying out in the light. In fact not going after food really at all last few days.
His color Looks great and I see absolutely nothing visually.

Is anything missing in your tank? These guys can be fairly predatory. Maybe it's had a large meal and isn't finished digesting it.
Other than that, it's hard to say. Sea star illnesses aren't well documented or understood.

Nothing missing, he usually is a veroshies eater. He does keep inflating and deflating his body.

Sorry to hear it. I've had stars that seemed to be doing great then just start disintegrating for no apparent reason. :(

So do I wait for it to die in my tank, releasing ammonia or take him out ending the suffering?

If it was me, I’d take him out. If you have other healthy fish and coral you can jeopardize them.
