So I'm interested in moving this guy to the middle of my tank what can i use to attach him to my scape without having to remove the rock? I have seachum glue but can't apply it underwater.

Might be best to remove from the plug and wedge it into a crevice somewhere. I always end up moving things so I avoid glue if I can.
I have a hammer colony that started that small. It got so big I fragged it down by half and traded in to LFS earlier this year. Already grown back to the point it needs trimming again.

You can pull he plug or leave it.

To stick it I use
super glue ,Coral putty, superglue , onto rock.

You can pull the coral out or just leave the heads in the water and apply the glue.

How should I go about removing the plug?

It's easier than you'd think, I've used wire cutters, pinching right at the base where it meets the plug. Usually pops off without much force. Just be sure to clean the wire cutters well after or they'll rust quickly.
Does the plug have a narrow base under it or is it just a disk? If it has a useful narrow base then you could just nip away chunks of the disk so it's not so visually obvious.

I would just glue the disc.
If it it has no plug(stick)
Then you can move it later.

Generally people say that if it's powerful lighting, it's usually best to move it up in a couple of steps with a week or so between. That said, I pretty much always just put things where I want them, sooner or later they adjust, so I'd say just go for it.

Besides babies , the heads split. Every one makes two. And so on.

If you make it mad and get it to retract , you May see each head almost looking like a figure 8.
