I have waited for years and recently decided it’s time to get started and hopefully have the summer holidays to watch the reef come alive. I watching lots of videos and my head is spinning trying to figure out a sweet spot, the rhythm I need and how to bring this hobby to a great start.

Welcome! Make a plan and move forward. There's always time to make changes and no doubt you will be making changes regardless of how well your plans are laid out anyways.
