The lfs guy said it was a green eyed Echy but I can’t find anything like it on google with that name

Looks an awful lot more like a torch coral. Hard to judge under neon blue.
 
Apparently it spreads across surfaces and stays quite low, here is a non blue light image. The shape might be a bit misleading, it is on a frag but looks like a ball but isn’t really

Yes, that’s the one, it just rolls off the tongue doesn’t it.

Is that a green star polyp then?
Yeah. Scientific name. It can grow fast and spread everywhere. Some love it, some hate it

It’s easy to cut away but once something takes hold, it’s not going away completely. Think about long term plans. If you don’t mind the grass look instead of sand, then it’s ok. Some people like to put it on the back wall so the wall has a grass look. I’d assume it’d take many months before it starts to grow to epidemic levels in a new tank. All depends on what look you want in your tank.
 
You can never hope to contain him, but you can cut him back. I glued mine to the back wall of the tank. First pic is what I started with, 2nd it started running up the front wall of the tank, last isn't great pic, but you can see where I moved it to the back wall. It will eventually spread all the way to the top. First pic to third pic is about 5 months.
