Should I just leave it running without the bit that collects the skim? Because that’s getting filled in seconds

You have to put a valve on the air line to adjust how much air the venturi is getting.

Can you show me an example?
Push connect ball valve should do the trick. How big is the intake line? Is it hard tubing or really soft?

It’s soft tubing
Looks like 1/4-3/8” tubing. Use valve in pics 1 or 3. All three will work though. Typically push connect is better for hard tubing like RO tubing.
Pull that tubing off and go to Lowe’s with it. Plumbing isle.

I have a Innovative Marine DC nano skimmer that doesn't have any type of air adjustment. The only adjustment it has is raising or lowering it via the bracket where it hangs. Not sure about the make/model of your skimmer.

I have used a zip tie to pinch the inlet of air tubing to reduce the overall flow. I did this when I had a tunze HOB skimmer back in my JBJ 30 days.

But if it is new your best bet is to let it run and find a compact way to drain off the skim into a bucket or something.

Protein Skimmers can take weeks to break in. You may need to turn it down and wait. Depending on its adjustability, you may want to just throw it in a bucket and let it run for a few weeks in the garage.
