Hi, I was doing my 10% water change for my fish tank, and I thought I had enough water. I actually didn’t, and will be heading to get some water from an LFS in a bit, it’ll take an hour-ish to get there and back. Will my fish be okay. Nothing is turned on since there isn’t enough water

Never remove water for a water change until your new water is ready to go in.

Unless you have it WAY overstocked, it'll be fine for an hour.

If you want a little extra peace of mind, drop in an air stone or a small power head to provide a little flow. Shouldn't be necessary though.
