Help with Understanding Startup Cycle Parameters

Hey everyone

Started up a new quarantine take to get ready for new fish. Haven’t done this in years and don’t quite understand the readings I’m getting. Everything is happening too quick. Here is what I have: 29 gal tank with about 25 gal of water, salinity 1.024, PH 8.2, temp 79. Test kit I grabbed was an API Saltwater Test Kit.
Day zero everything up and running. Used Fritz Pro Aquatic Ammonium Chloride. Directions were one teaspoon for 100 gal so I dosed 1/8 teaspoon. Checked ammonia after one hour and it was about 2ppm which is what I wanted. Something I didn’t have years age was a bacteria starter. I used BioSpira. Bottle was for 75 gal and I put the entire bottle in. 24 hours later I tested ammonia expecting it to be about the same, but it was almost zero. so, I checked nitrites. 5ppm. What?! Confused I checked nitrates and they were well above the color chart so I guessed above 60+. Did a 4 gal water change, added another tiny bit of ammonia and waited 24 hours. Same thing! Ammonia almost zero nitrites coming down and nitrates high.

Does this seem correct since I used the BioSpira? And, if so, is the tank cycled already.

Whoops! Forgot. Red is ammonia, blue is nitrite and green is nitrate. 4-5 gal water change everyday.

I assume I want to keep dosing ammonia until I am ready to put fish in to keep the bacteria fed. Is that correct? And stop the ammonia say 24 hours or so before I put any fish in?
 
Nitrate test will not give correct results with the presence of nitrite
