When snails all die at once, it's for one of several reasons.
1. There's not enough algae and detritus for them to feed on and they starve
2. Something has shocked the system (ie temp and/or SG fluctuations)
3. The tank not being mature enough and ammonia/nitrite still present
4. Predatory hermits (once they get a taste for snail, it's basically a massacre in the making)
5. If a tank has previously been treated with copper-based medications (especially in second hand tanks)
Assuming your tank is established and nothing is eating them, my guess would be shock from parameter fluctuations.
