How long before new fish trust you ?

If they do not hide when you approach the tank slowly, they will get used to you, and realize that you feed them. If they have good hiding places, they will feel more secure, knowing they can hide if need be, and they will be more and more out.
But yes, it depends of the fish.
they are almost impossible so see when they're hiding. Lots of little holes and visual barriers

Then you have a very good setting for your fish. You build the tank for them, which is what it should be. I have 14 fish in my aquarium, and when they go and hide, I can only, see my largest one, the rabbitfish and not even always. However, They mainly hide at night, and are out , or weave in and out of the rock all day long. All were skittish when first introduce.
