I am setting up my tank and know that I want a wrasse and a sand sifting goby in the future. Anyway, I was wondering what size of sand and how deep would be required in my setup.

About two inches is good enough for the both of them but if you are keeping a sand sifting goby its best you put on a tight fitting lid because they can jump

Personally I go for quite fine sand mostly for aesthetics but also because it can trap more detritus for your diamond goby to eat and that its easier for the wrasse to burrow under

However if your tank has high flow then this may not be that good of an option because it can cause bare spots in some areas but I just move it back into place ;Smuggrin

I used Caribbean live sand & then mixed 2 bags of the crushed live Coral in my tank but I wanted to also have Jawfish which need the slightly bigger pieces to help biuld their homes.
