Do you think I can put 15 gal of water on top of an empty 5 gal salt bucket? Will it hold with that much weight on top?

I'm sure it will. I would turn the bucket over so the top is down. Cylinders are prolly to strongest shape as they have no corners as weak spots.

Can't tell you exact numbers, but I'd say hundreds of pounds, 500? I know we've taken them and put boards across them for a short scaffold and had 600 pounds of guys on them. two buckets and a board

It will more than likely hold a 40 gallon. What you will eventually run into is a lack of balance or too much pressure in a central location on the bottom of whatever you set on it

It won't like lateral forces when loaded. I'd stick to under 200 pounds and make sure that it isn't bumped heavily.
