A gallon of vinegar contains about 5% acetic acid, or 189 g.
molecular weight of acetic acid is 60 g/mole, so that is 189/60 = 3.2 moles.
Since each calcium hydroxide (Ca(OH)2) adds 2 moles of hydroxide, that acid neutralizes 3.2/2 = 1.6 moles of calcium hydroxide.
Molecular weight of calcium hydroxide is 74 g/mole, so 1.6 moles is about 118 grams.
That results in complete neutralization. A little more calcium hydroxide will dissolve. Maybe another couple of grams.
There's also nothing wrong with adding excess and using the clear liquid. That's what I did.
Don't try to store the fully neutralized solution as bacteria may grow in it. Either have excess vinegar or hydroxide to deter growth.
