So, here's what I would like to do. I have a new RO/DI unit coming this week hopefully. Its a 6 stage. I want to plumb it directly into my bathroom sink in the room next door. How can I achieve this?

Use a feed water adapter. It installs in your existing cold water supply line under the sink with no permanant damge andyou don't have to cutany pipe or sweat in any tees or valves. You can find them at any Lowes, HD or hardware or RO places like this:
Feed water adapter (1/2in male x 1/2in female x 1/4in tubing) - VA-FD-4
Do not use a self tapping or piercing valve if at all possble.
For the waste you install a drain saddle in the sink drain on the sink side of the P trap.
Waste-Water Drain Saddle - 1/4in Compression Fit - DS-4T

Turn off water to your house, unscrew your old valve, screw one like this on. Take the nut off and the brass compression fitting off and screw your sink line back into the valve. Slide the nut then the compression fitting over the RO water lines. Seat it down into the valve completely, slide the compression fitting down all the way and tighten the nut. Don't over tighten or it can pierce the water line. This is probably the most elegant solution. Just make sure you get the one that is sized to fit your flex line running to your sink. The RO line is most likely going to be 1/4"
Also, the 1/4 turn valves are allot nicer. The old style ones require you to turn them 2-3 times around to completely shut them off. These are just tiny metal ball valves. Much nicer.
