My trigger has been shy lately and when he comes up too eat, it seems like he misses the pellets. I don't think he's blind and everything looks fine.

Many species of trigger can be shy when settling in. Have you had this fish long?

I've noticed many fish don't like hard pellets initially. You can pre soak them to soften up (in a cup of tank water), or better yet try a good frozen food like PE Mysis or LRS Fish Frenzy. If all else fails I'm yet to meet a trigger that's not enticed by live ghost shrimp :)
