I don't quite understand aquarium controllers

I'm only familiar with Apex, and the answer is yes. You can keep daisy chaining energy bars and probe modules.
The only thing here is that if you start with an Apex Jr, you can "only" add 8 modules. I have a Jr and have 2 EB8s, a pm-1, and a leak detection module. I can still add 4 more modules.

Yes, with the GHL Profilux 4, you can just add additional outlet bars... as well as probes, etc.... you only need one actual controller! In fact, you can control multiple tanks with one controller!
