So I was rearrange my rock which has mushrooms on it and as I did this, a load of tentacles on the middle of the mushroom came out and stung my finger.

are these toxic to humans?

I think you’ll be ok, I think it’s the guts trying to digest you. Did you have anything on your hands, like creams of some sort? They tend to respond to chemical cues in the vicinity. They use these to kill other corals that are getting in their way.

I’d washed my hands 5 mins before, so could be the soap from that.

it’s only got the end of my finger, felt like a little shock.

Huh. I didn't realize mushrooms could get ticked off...
 
All corals and anemones can sting as they contain stinging cells. However, we usually do not react to many corals so badly. Depends on the person.
Are you sure you did not have a tiny cut on the finger and it reacted. I have had that and then find a tiny cut I would have never known was there before messing in the tank with corals.
