How in the world is this possible after a month with running the at 1.007 i still see ich on my fish.im i doing anything wrong?

Some ich can survive in salinity levels as low as 1.002 which is almost fresh water, thats why its better always to go with copper or cp as they have higher chance of success.

Both of those meds are also super easy to use

I agree - it is probably velvet. There are some strains of ich that can live in hyposaline conditions, as said.

I find salinity levels are never consistent enough to battle ich, unless you are using an auto top up but who has a spare or the money to use on their QT? (I sure don't hehe)
Personally I like TTM which doesn't poison the fish like copper does and CP is not easy to get a hold of unless your "connected"
Might be a little fiddly but after a few transfers it's a piece of cake.
It's also winter in Melbourne so my floor ducted heating has another use - to dry and kill those ******* cysts - before my next transfer.
