what mushroom is this? Easy to care for?

It is defiantly not a mushroom but I think it looks closer to a candy cane coral.

Yes, they are pretty easy to take care of. At night time, they usually send out feeder tentacles and they liked to be target fed every once and a while. Here is a link to what Liveaquaria says about their care requirements-
