It’s become the popular “wellness” fad to drink higher alkaline water. My tank has never had high pH (usually around 7.5); would adding one of these ionizing units help to increase the pH?

I would use it primarily to fill the ATO, but when it mixes with the saltwater of the tank, will it maintain and subsequently increase the pH of the tank or no

Nope.

The things one can do to seawater to raise pH can only work in one or both of two ways: add alkalinity or remove CO2.
