I've had this anemone for about 4 months now. At first he was a very bright pink color. Now he has turned a pale pink. His tenacles are long insteas of "bubbles" and it has developed white on his plate. Is this normal? I feed him a mix of small pieces of shrimp and salmon 1 time a week and he has no problem grabbing it and eating.

It looks good to me. The tentacles will go from bubbly to long based on many factors. It could just be transitioning based on the lighting or flow. I would start to get concerned if the tentacles begin to look clear. This means that the anemone is losing its zooxanthallae.
 
If it is eating and the mouth isn't turning inside out you should be fine. Like the post above said, keep an eye on the color. From the pic it looks fine.
