Im planning to change my white channel, which is 16 cool whites, to 10 or 12 RB. Should I change the rest to 3500k or leave them CW?

what diodes?
what is/are the other channel(s)?
why do you want to switch?
 
They will be cree 5w. I don't use the cw channel at all. Just run rb,b,uv all at 100%. I love the pop but want a tad more warmth to bring out the greens and yellows.
 
If your not using the bar at all, no sense "diluting" the channel w/ more blue.
But that is your choice..

this has a relatively flat spectrum from blue/cyan to reg red
BUT watch the beam angle..

Are your current diodes lensed?

Will add pop to almost all colors and not add too much of a yellow cast as would too many low K LED's..
For a bit more red kick add a few (very few) 660nm reds..Cree calls them "photo red"..

For less "balanced" effects just go RGB......or R(mint/lime)B..possibly skipping the blue..

this would be my suggestion.

Disclaimer: Mostly theoretical though others have used the sunplus high CRI diodes in this fashion..

Though at a cost.. fun part of DIY is experimenting...

It's really a matter of choice. I can't tell you how many times I've advised someone on lighting and later got a reply along the lines of "My wife didn't like the color" or "They made the carpet look purple." ;) :D But I can say the higher Kelvin white LEDs are more photosynthetically efficient and are a little better at showcasing coral fluorescence than the warmer LEDs.
 
Sorry I left out that I do have 4 red and 4 green on each light, running 2 lights. I've added a coral+ in the past and it was too white for my liking.
I might just add some rb and keep some cw to see what it looks like before trying any ww.
