It's up to you. If you want the controller to handle the dimming function then you have to plug in the dimming wires into the controller somehow, no potentiometers will be involved here. Or you can preset the dimming with potentiometers and have the controller just act as a timer like usual. You can rig up multiple drivers to share the same potentiometer or line to the controller, but like you said you would need one for each set of LEDs (blues, whites). I'm not sure what you mean by "high noons" and moon lights. If you dim using the controller your whites can act as high noon and the blues can act as moon lights by ramping up and down during the day.
