Been to a lot of fish stores and their tanks always look clean and corals growth and doing well. I have asked many of them what they do as far dosing, water changes,etc and most say they do nothing. I have had some say they use “premium water”, special chems and various other what I’d call gimmicks. So just curious is there any hobbyist out there that do nothing, no water changes no dosing and still have pristine tanks.

Most LFS only have to keep the live stock healthy and looking good until they sell them so I wouldn't rely on doing zero maintenance on your tank.
You can have a very nice tank with softies and a few LPS without dosing. Water changes can keep up with the demands of a tank like this as long as you do them regularly. I have had several smaller tanks that I ran successfully with just good flow a HOB filter for carbon, and twice monthly 25% water changes.
