Live Rock help

I am in the process of aqua-scaping my new 250 build. I currently have all my dry rock structures done and now I am working on adding the 100+ pounds of live rock. My tank is currently dry.
My question is this...

How long can the live rock last out of water? It'll take me a day to scape the wet rock. And probably another 2-3 days to finish making enough salt water to cover everything. If I cover the live rock with a wet towel, will that keep the critters and bacteria alive and kicking until water is added?

HELP!
 
Wrap it in newspaper or paper towels and soak it. It should be ok long as it dont get dry. Try to keep it inside also so it dont get bugs and junk on it while its waiting for you.
