My tank is established and all parameter look good, if I was to put more live rock in it would it mess up everything.

If the new rock is truly live, then there should be no problem. Also, how much are you planning on adding, small amounts should be fine.

I only have about 3lbs in it right now and about 12lbs of dry rock. I was wanting to put about another 8lbs or so. That's still not as much as recommended for my 35 gal tank

Just wanting to put a couple more pieces in to stack to make more hiding spots for the fish

If its Cured Live Rock, you've got nothing to worry about, if its not Cured and has some die off, it may or may not run you into a mini cycle. Your system may be mature enough to hold off the Ammonia, if its not terribly to much.
