My salinity has been idling around 31.2-31.5 for a few days now. Is raising that up as easy as sprinkling some salt in a high flow area or adding a little water with extra salt mixed into it? Is this even something to worry about?

Yes it's as simple as putting some salt into a cup or 2 of ro/di water and stirring it up before pouring into a high flow area. To minimize stress, raise slowly, over 3 to 4 days until it reaches 35ppt. Never add undisolved salt to a tank with any live inhabitants.
.

Can I take a little water from the tank and mix extra salt into it, then pour it back in? That way I'm mixing the salt into 78 degree water?

31.4 Salinity. Just added a mixture of saltwater. Will see what results are in the morning

You can add new mixed salt water to your ATO and you won't have to worry about as it will do it automatic.
Just test every day and every time you fill up your ATO if you need more.

Does it usually take a substantial amount of salt to raise levels? About 85 gallons total

If you add 35 ppt seawater to replace evaporation in 31.3 ppt seawater, you will have to add about 10.6% of the tank volume, or 10.6 gallons per 100 gallons actual water volume. :)
